What Is Phở Bò?

Phở Bò, or Vietnamese beef noodle soup, is a beloved national dish of Vietnam. With roots tracing back to early 20th-century northern Vietnam, phở has become a global symbol of Vietnamese cuisine. At its heart, phở is a delicate, slow-cooked broth layered with depth and umami, poured over flat rice noodles (bánh phở) and topped with thinly sliced beef, fresh herbs, and condiments to taste.

Here at The Rocks Marino, we prepare our Phở Bò Hà Nội-style — staying true to its northern origins. Unlike southern phở, which is typically sweeter and heavier on the herbs, Hà Nội-style phở is known for its clear, savoury broth and simple, clean garnishes that let the quality of the broth and beef shine through.

How It’s Made: The Hà Nội Tradition

Our phở broth is simmered for hours using beef bones, star anise, cinnamon, cloves, charred onions, and ginger — creating a rich but refined flavour. It’s then served piping hot with flat rice noodles, tender beef slices, and a handful of green onions. A side of crispy fried dough sticks (quẩy) is included for dipping — a northern Vietnamese favourite that adds crunch and heartiness to every bite.

You’ll also find optional condiments like fresh lemon, pickled garlic, and Sriracha on the side — allowing you to adjust the flavour to your personal taste.
